Lunch box tips

On this page, we at StuFF share tips on what you can pack in your lunchbox! Here you’ll find some of our favorite dishes, varying in simplicity and cost, to inspire you when your creativity runs out.

All recipes make 4–6 lunchboxes!

Pasta Rosso

Ingredients:

500g pasta of your choice

3 cloves of garlic

2 onions

approx. 150g pesto rosso

1 pck cherry tomatoes

olive oil

basil

Instructions:

  1. Chop the onion and garlic, then sauté them in olive oil over medium heat until soft.
  2. Halve the tomatoes and fry them over high heat until they turn slightly orange.
  3. Pour in about 200 ml (¾ cup) of pasta water and stir until it forms a sauce.
  4. Add the basil and pesto, then season with salt and pepper to taste.
  5. Pour the sauce over the pasta and mix until everything is well combined.
  6. Divide into your lunchboxes.
  7. Done!

Orange chicken

Ingredients:

1 kg chicken

Rice of your choice

2 tbsp sesame oil

½ dl japanese soy sauce

1 red pepper

2-3 spring onions

3 cloves of garlic

3 dl orange juice

250 ml hoisin sause

2 msk potato flour/maizena

Instructions:

  1. Slice the chicken and place it in a bowl.
  2. Add the chopped garlic, sesame oil, and soy sauce. Let the chicken marinate for 15 minutes.
  3. Fry the chicken, then add roughly chopped bell pepper and spring onion.
  4. Meanwhile, mix the orange juice, hoisin sauce, and potato starch in a separate bowl.
  5. When the chicken and vegetables are cooked, transfer them to a separate plate.
  6. In the same pan you used for the chicken, pour in the sauce and simmer over low heat.
  7. Once the sauce has thickened, return the chicken and vegetables to the pan and stir until everything is well combined.
  8. Then portion out the rice and chicken mixture into lunchboxes.
  9. Done!

Meatballs and macaroni

Instructions:

500g macaroni

30-40 meatballs

Instructions:

  1. Boil the macaroi according to the instructions and fry the meatballs until desired crispness.
  2. Divide into lunch boxes.
  3. It can't get much easier!
